Cruffin Recipe




Cruffin


Cruffin is a mix of croissant and muffin, this recipe of cruffin gets close of an artesanal bread prepare. Learn how to make:



You will need:


  • Rolling Pin
  • Cupcakes or muffin baking molds
  • Baking paper
  • Bamboo skewers


Ingredients:


  • For the starter 25g of flour+ 30g of water+ 5 g of sugar+ 5 g instant yeast 
  • 250g of flour
  • 35 g of sugar
  • 130g of water
  • 70 g of unsalted butter
Instructions:

  1. Make the starter by mixing it. Let it rest for 30 minutes.
  2. Mix the dry ingredients.
  3. Add the starter to the other ingredients (do not use the butter yet)
  4. Do not mix too much, let it rest for 15 minutes.
  5. Knead the dough, use wet hands to help.
  6. Rest for 15 miutes.
  7. Knead again.
  8. Refrigerate covered for 1 hour.
  9. Make a square of butter, using the rolling pin.
  10. Apply the tradicional technique for croissant dough, with at least 3 simple folds. 
  11. Cut into the croissant triangles.
  12. Wrap it in the bamboo skewers (they must be covered with a greased baking paper).
  13. Put in baking molds.
  14. Let it rest for 1 hour or more.
  15. Bake in preheated oven 180ºC for 30 minutes.
  16. Fill and Garnish as desired.
