Cruffin
Cruffin is a mix of croissant and muffin, this recipe of cruffin gets close of an artesanal bread prepare. Learn how to make:
You will need:
- Rolling Pin
- Cupcakes or muffin baking molds
- Baking paper
- Bamboo skewers
Ingredients:
- For the starter 25g of flour+ 30g of water+ 5 g of sugar+ 5 g instant yeast
- 250g of flour
- 35 g of sugar
- 130g of water
- 70 g of unsalted butter
- Make the starter by mixing it. Let it rest for 30 minutes.
- Mix the dry ingredients.
- Add the starter to the other ingredients (do not use the butter yet)
- Do not mix too much, let it rest for 15 minutes.
- Knead the dough, use wet hands to help.
- Rest for 15 miutes.
- Knead again.
- Refrigerate covered for 1 hour.
- Make a square of butter, using the rolling pin.
- Apply the tradicional technique for croissant dough, with at least 3 simple folds.
- Cut into the croissant triangles.
- Wrap it in the bamboo skewers (they must be covered with a greased baking paper).
- Put in baking molds.
- Let it rest for 1 hour or more.
- Bake in preheated oven 180ºC for 30 minutes.
- Fill and Garnish as desired.
